Sat on the terrace outside Domaine Gavoty, having a lunch of grilled sardines and ratatouille washed down with an ice cold glass of rosé, it was difficult to imagine a more beautiful place to be. In the heart of the Côtes de Provence, the vineyards have been here since Roman times. In the Gavoty family for more than 200 years, the estate is currently run by the eighth generation, Roselyne, who farms the 43 hectares of vineyards organically and has a deep respect for the environment. 150 hectares of the property is left fallow, mostly as woodland, to encourage biodiversity. The Domaine makes perhaps the greatest white in the region from 100% Rolle. Full yet crisp in youth, it ages magnificently over 10 years or more. |
